Basically, Gojo’s Six Eyes (an ability he inherits from his family) allows him to see Cursed Energy in amazing detail. Because of this ability, Gojo easily feels exhausted if he doesn’t wear a blindfold. 

So, the blindfold means to diminish the intensity and save up some energy from using his ability. And, despite always wearing a blindfold, he can still “feel” everything in front of him.

Thus, that’s why Gojo Satoru only takes off his blindfold when having a serious fight.
