Oda-sensei said that even if it was night time there had to be at least two people on guard and one stays in the back and they would take turns for 2 hours. They might not have a definite schedule for sleep, let's start from Brook.

Brook is a member of the Straw Hats crew with the short time of sleep. He usually go to bed at 12 am and wake up at 5 am. Next is Sanji, he is the Straw Hats crew member who got up early because he is in charge of making breakfast for the ladies and gives the leftovers to the men. Sanji always makes breakfast for the ladies. Just like Brook, Sanji usually go to bed at 12 am and wake up at 5 am.

Next up is the captain of the ship, Luffy. Luffy will sleep when he feels sleepy and wake up when he wants to. The Straw Hats captain usually sleeps for 5 hours. Then Brook, he usually humming before going to bed. Brook tries to sleep longer than the rest of the crew members because he feels that he has the task to accompany his friends to sleep with his music.
